Local Cuisine
Pahari or Himachali cuisines have very little global presence. But, it’s simple flavours and earthiness leaves an everlasting impression on your mind. The most famous dishes from Shimla are Channa Madra (Chickpeas in gravy), Chicken Anardana, Siddus - a winter delight filled with a small amount of paste of poppy seeds, sometimes mutton or a sweet filling is also prepared, Sepu badi Madra made with a fine mixture of Urad & Chan Dal and Auriya Kadoo (Tasty Pumpkin).
